Ciri being a Witcheress is highly risky no doubt, but she shows skill at monster hunting and fighting over and over in the game, it's also something she personally wants to do (even in the Empress ending it's clear she personally wants to be a Witcher, but sacrifices her wants for the greater good.)
Exactly. Ciri never wants to become the Empress. In this ending, however, she decides to become the Empress, acting contrary to her own desires and nature, because Emhyr has convinced her that she can do the most good for the world by taking on this responsibility. By doing so, Ciri is making a mistake. At some level, she knows that she is making a mistake.
For Ciri to be the empress, you need both Nilfgaard winning and assassinating Radovid. if one of these two conditions aren't met, Ciri becomes a Witcher. Those three choices combo you mentioned are my exact choices in my most recent two or three playthrus and in all of them, Ciri becomes a Witcher, assuming I didn't get her killed.

Ending #3 - Ciri is Alive. The first requirement that must be met for this ending is that you cannot have gone to see the Emperor during the Blood on the Battlefield main quest. This would have left you with only four choices regarding the Fate of the Swallow, so making sure you have more positive than negative is key.
So, as I understand it, the ending where Ciri becomes the Empress is kinda considered the "good" ending, the ending where she dies is of course the bad ending, with the ending where she becomes a Witcher is sort of a "happy" ending but not the best one for the world.
